With all the festivals, picnics, weddings and parties going on over the summer, it can be difficult to eat healthily. It is so easy just to binge eat on unhealthy yet convenient foods and just get stuck in a food-based rut.

This isn’t ideal if you are trying to work on your bikini body.

However, it doesn’t need to be this way.

There are so many different summer recipes out there which not only look amazing and taste incredible, they are also super easy to create too.

We have picked out some of our favourites from Instagram below: which are you going to try this summer?

1. Broad Bean Dip @jamieoliver

This is the perfect recipe for all of those picnics coming up.

It is the perfect alternative to some of the more unhealthy dips out there, using simply broad beans, lemon, dill and creme fraiche.

You could make this even healthier by using reduced fat creme fraiche if you really wanted.

Broad beans are also in season in the summer, so they’re very easy to get hold of in the supermarket.

2. Black Rice Salad @deliciouslyella

This would be a perfect lunch to make ahead and take to work.

Ella from @deliciouslyella combines super healthy and fibre-packed black rice with some mange tout, courgette, mint, chili and almonds. Yum!

You could change up the vegetables for whatever you have in the cupboard, making this a very versatile recipe.

The fresh mint is a great idea to elevate the salad to something special and makes it very summery.

 

3. Avocado Lime Cheesecake

Cheesecakes don’t always need to be super unhealthy as Jasmine and Melissa from @hemsleyhemsley demonstrate.

They have combined whizzed up avocado, lime juice and coconut oil to make the cheesecake topping, whilst pecan nuts, cacao nibs and dates are used for the base.

The addition of fresh fruit makes these cute puddings even more summery.

4. Cauliflower Curry @ohsheglows

This gorgeous cauliflower curry is entirely vegan and plant-based, as is a great recipe for those summer evening parties.

Cauliflower is a great vegetable which is both filling and tasty, and provides a great alternative to meat.

The use of curry powder makes this super easy and quick to whip up too.

The addition of brown rice makes this recipe full of fibre as well.

You need to grab this recipe for all those BBQ’s you have got coming up.

Just combine chicken wings, mango, molasses, vinegar, chili and some spices and just put them on the BBQ to get that delicious smokey flavour.

BBQ is actually a super healthy way to cook, as you’re not needing to use loads of oil to fry or deep fry.
